Pre-Renaissance, Renaissance, Baroque, Classical, Romantic, Impressionist, Modern, Concert Tango, Jazz, Soul, Funk, Gospel
This includes anything by J. S. Bach, John Patitucci, Astor Piazzolla, Weather Report, Miles Davis, Wayne Shorter, Josef Zawinul, Maurice Ravel, Claude Debussy, and Hildegard van Bingen (who was, unfortunately, a mystic). Bands like Jamiroquai and Tower of Power are so groovin' that I can almost forgive them for their horrendous lyrics.
I mostly like black gospel music, not that the theology is always good. One thing that really makes nearly all Christian music unpardonable is the irrationalist lyrics.
I have a fairly strong distaste for rock and nearly everything related (gospel is more related to jazz) to it. This is not because I think it is evil; it's because I think it is vapid. I am extremely disappointed in the Christian music of the last fifteen to twenty years. They have little or nothing to offer people who rejoice in fine composition. Furthermore, the lyrics are so trite and doctrinally weak that they fail to redeem the irritating uncreativeness.

Oh Yeah. Monergism.com is a great site. I've ordered a good bit from there. So who are your favorite modern "theologians"? I tend to dig Mahaney, Harris, Piper, Dever, Mohler....there are quite a few. All of these men have a passionate heart for Christ and His glory.
