I'm not sure exactly what I'm wanting so hopefully I can explain this
A lot of times in restaurant and such when you order saulsberry (sp??) steak (and sometimes pot roast) it will be served covered in this really dark brown rich gravy... Its not a light brown like you would serve on mashed potatoes or anything though...
Any one know how to make it or know what I should google to figure out how to make it??

Wow... I see that you posted this last year, and nobody's responded yet. I hope that it's not too terribly late, but maybe I can help. I think you're looking for beef gravy. I've found two good recipes for this.
Gravy
Ingredients:
1 1/3 cup Instant nonfat milk powder
3/4 cup Instant flour
3 tablespoons Instant beef bouillon granules
1/8 teaspoon Ground thyme
1/4 teaspoon Onion powder
1/8 teaspoon Ground sage
1/2 cup Butter or margarine
3 teaspoons Brown sauce for gravy
***TO MAKE BEEF GRAVY***
1 cup Cold water
1/2 cup Beef gravy mix
Directions:
Combine milk powder, flour, bouillon granules, thyme, onion powder, and sage. Stir with a wire whisk to blend. Use a pastry blender or 2 knives to cut in butter or margarine until evenly distributed.
Drizzle brown sauce for gravy over mixture. Stir with wire whisk until blended. Spoon into a 3 cup container with a tight fitting lid. Label with date and contents. Store in refrigerator. Use within 4 to 6 weeks.
TO MAKE BEEF GRAVY: Pour water into a small saucepan. Use a whisk to stir beef gravy mix into water. Stir constantly over medium heat until gravy is smooth and slightly thickened, 2 to 3 minutes. Makes about 1 cup.
Beef Gravy
Ingredients:
1/4 cup butter
1/4 cup flour
2 cups beef broth
1/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon Kitchen Bouquet (more if you like)
Directions:
Melt butter in a saucepan over medium heat. Add flour and whisk together, making sure to get all visible lumps. Add salt and pepper.
Cook over medium heat for 5 minutes or until mixture starts to turn light brown, be sure to stir constantly.
Turn heat to low and SLOWLY add broth, stirring constantly. (It will spit and bubble so be careful.) Add Kitchen Bouquet.
Turn heat back up to medium. Continue stirring until gravy boils and thickens. Makes about 2 cups.
