What are your favorite made-from-scratch recipes? This could be anything at all.

Lately I've been experimenting more and more with these kinds of recipes and it's been fun! It's more work, but I'm finding the flavor is worth the effort.

Cornbread or Corn Muffins

1 cup flour
2 ½ tsp baking powder
1/3 tsp salt
¼ tsp baking soda
½ cup cornmeal
¼ cup butter
¼ cup sugar
¼ cup honey
¾ cup cold milk
1 egg yolk
1 egg white

Stir together flour, baking powder, salt, baking soda and sugar. Add cornmeal to flour mixture. In a separate bowl, combine honey and milk. Melt butter and add to milk mixture. Add yolk to milk mixture. Stir the wet ingredients together, making sure to break up the yolk well. Add the wet ingredients to the dry ingredients. Stir only enough to dampen. Beat egg white until stiff and fold into batter. Pour batter into greased muffin cups or baking dish. Bake at 375 degrees for 12-14 minutes for muffins or slightly longer for cornbread.

Yield: about 12 muffins or an 8x8 or 7x11 pan of bread.
