I decided that this needed some rephrasing. I guess what makes music music is when you can hear order in the sounds, when it somehow doesn't sound natural or random anymore. Of course, this can be different for different people: one person may not pay much attention and may think he is hearing noise. But, if he pays closer attention he may begin to an order. This is different than simply liking a piece of music.
Still, it's somehow ambiguous because under this definition talking would qualify, unless you consider talking "natural" - but no matter what definition you give of music I think you'll run into problems like this. Which is why I avoid giving definitions.
